Low Sugar Lemon Curd

When life gives you lemons make lemon curd! This super simple lemon curd recipe is great as a dessert topping, cake filling, and so much more!


¾ cup lemon juice

¾ cup Impact Monk Fruit & Allulose Sweetener 

½ cup butter 

3 eggs 

1 tbsp lemon zest 


  1. Combine all ingredients in a medium saucepan. 
  2. Cook over medium heat until mixture thickens (about 5-6 minutes), whisking constantly. 
  3. Let cool to room temperature, then refrigerate for 2 hrs before serving.
